2-3 cups spinach
1 whole roasted Kumara, cut into chunks
1/2 – 1 Avocado, cut
1 1/2 cups cooked Broccoli (with pesto, optional)
1 Corn cob, cooked and cut off the cob
1 cup cooked shredded chicken
2 Poached eggs per person
And drizzled in a Zingy dressing recipe from @homegrownkitchen which is mind blowing levels of deliciousness!!!
Adapted Zingy dressing recipe:
- 1/2 lemon juiced
- 2 Tbsp whole-egg (homemade if possible) mayonaise (Ceres organics have a great one!)
- pinch of cayenne pepper
- 1 tsp paprika powder
Mix together really well and drizzle over salads.
Delicious on hot out the oven kumara fries!
